Sweet Potato Muffins

       2           eggs -- beaten

       1           cup  milk

       1           cup  mashed sweet potatoes -- canned or cooked

   1 1/2         cups  all-purpose flour

       1           tablespoon  sugar

       5           teaspoons  baking powder

     1/2          teaspoon  salt

     1/3         cup  shortening -- melted


combine eggs, milk and potatoes, beat until smooth.

Combine dry ingredients, add to potatoe mixture, blending thoroughly.

Add shortening, mix well. Fill greased muffin pan, two thirds full.  Bake at 400 degrees for 30 to 40 minutes.

Makes 12 to 15 2 inch muffins.
